Abstract

Abstract. Pectin substances isolated from pear fruit waste. Physical and chemical parameters and monosaccharide composition were studied. According to the results of paper chromatography, the monosaccharide composition of uronic acid, galactose, glucose, arabinose, xylose and rhamnose are in small quantities. The isolated pectin is highly esterified pectin and can be used in food production as a gelling agent.
