Abstract

Pear culture in various countries of the world with a temperate climate, including Ukraine, ranks second after the apples. Pear fruits have high nutritional value. The taste, dietary and medicinal properties are due to the high content of sugars (6-16%), organic acids (0.1-0.3%), the presence of vitamins A, B, P, PP, C, trace elements and biologically active substances. The presence of a large number of varieties allows us to have fresh fruits for 8-10 months and when stored in CA refrigerators – almost all year around. [1, 4, 7]
