Abstract
This article presents the results of the evaluation of the antiradical activity of the alcoholic extract of potato (Solanum tuberosum L.) leaves by the method of quenching diphenylpicrylhydrazyl (DPPH) free radicals and the determination of the amount of phenolic compounds (flavonoids) using the high-performance liquid chromatography (HPLC) method. The extract, obtained by extracting dried and crushed potato leaves in 96% ethanol in an ultrasonic bath for 20 minutes, has a very high antiradical activity, with an IC50 value of 15.28. The alcoholic extract of potato leaves, along with flavonoids such as salicylic acid, quercetin, apigenin, and a large amount of kaempferol, was found to be present.
