Аннотация

The article presents the results of experiments on the development of technology for the preparation of natural medicinal drinks based on extracts of milk thistle (Silybum marianum L.). The creation of technology for the production of therapeutic and prophylactic food products with the addition of plant extracts rich in biologically active substances is aimed at public health in the country and the world. The optimal conditions for the extraction of silymarin and silybin from crushed milk thistle seeds were determined: the concentration of ethyl alcohol is 80%; temperature 70°С; duration of the extraction process 60 min; the ratio of raw materials and extractant 1:20.
