Аннотация

A theoretical study of the process of changing the temperature and moisture content inside the melon during preliminary processing, which is carried out to form a suitable temperature and humidity before drying, was carried out. As a mathematical model, differential equations of heat and mass transfer proposed by A. V. Lykov were used. In this case, for the internal boundary, symmetry conditions were used, for the external boundary, heat and mass transfer with the external environment, the values of which are described by regression equations obtained on the basis of experimental data. The problem is solved by the finite difference method. Regularities of temperature deepening and, accordingly, a decrease in humidity along the melon layers are found.
