This chapter offers a comprehensive examination of hydrophobic and natural deep eutectic solvents (DES), focusing on their discovery, molecular structures, properties, and diverse applications. It explores how DES are formed through the combination of hydrogen bond donors and acceptors, resulting in unique physaic-ochemical properties like adjustable viscosity and polarity.
