Аннотация

Conjugates of chitosan with ferulic (Chit–FA) and caffeic (Chit–CA) acids were synthesized by the carbodiimide method. The formation of conjugates was confirmed via UV and IR spectroscopy. It was shown that their antioxidant activity increased in the order Chitosan < Chit–FA < Chit–CA. Ultrathin films (less than 100 nm) were prepared with the synthesized conjugates, and their physicochemical properties were studied by a quartz crystal microbalance and atomic force microscopy. It was established that the pretreatment of radish seeds with the synthesized chitosan–hydroxycinnamic acid conjugates contributes to an increase in the tuber vitamin C content and a decrease in the tuber nitrate level.
