The growing complexity of the world food supply chains requires highly smart real-time monitoring, efficiency, and sustainability systems. The chapter examines how Artificial Intelligence (AI) and digital twin can be integrated to improve the processes of food logistics. Digital twins offer the capability of remote virtualization of physical supply chains through the combination of both IoT-enabled data collection and predictive analytics and simulation possibilities. These systems facilitate the proactive decision-making process, minimization of food wastes, better cold chain, and usage of resources. Case studies have quality indicators of quantifiable spoilage control, operational efficiency and sustainability achievement. The paper identifies the opportunities offered by AI-based digital twins to create resilient, transparent, and sustainable food supply chain ecosystems.
