The paper considers the methods of system thinking [5], in the analysis, modeling, and search for optimal solutions of a freeze-drying plant on the example of beet drying. On the basis of system thinking [1, 8], a method of mathematical and computer modeling of freeze-drying plant processes has been developed. It includes mathematical models under the processes in each quasi-apparatus, in particular, the originally compiled computer model of the change in the temperature of the material, the change in the transfer of thermal energy.
