Abstract

The article provides a detailed overview of the chemical composition of barley grain and malt, their properties, and their effects on the human body. It also presents information on the beneficial aspects of barley malt. The major carbohydrates contained in barley and their biochemical transformations in an aqueous medium are explained. The use of non-traditional methods for drying barley malt is proposed. Due to its high content of dietary fibers, barley malt contributes to the removal of harmful substances from the body and has a positive effect on intestinal function. Therefore, it is justified that yogurts enriched with barley malt can be considered as biologically active supplements.
