Аннотация
Chitosan Portunus trituberculatus (Eschscholtz, 1823) with a molecular mass of 780 kDa and a deacetylation degree of 84% was isolated from secondary food industry waste, and its physicochemical properties and antifungal activity were studied. Chitosan solutions were demonstrated to exhibit fungicidal activity against the phytopathogen Fusarium oxysporum, forming a sterile zone with an average diameter of 24.5 ± 2 mm. Extraction of chitosan from Portunus trituberculatus is of interest for the synthesis of new derivatives and modifications of chitosan used in the agro-industrial complex.
